Any suggestions for 56K fax modem?

For outgoing fax and good dial-in, take a close look at the USR Courier
series.  (They suck for incoming fax, though).  Make sure you get the
most recent firmware.

ELSA is also very good for fax, but I haven't that much experience using
them for dial-up.

Yep, ELSA, and to a certain extent, USR.  Most others suck.  Really.
