Tex-Mex Easter Lamb and Tyler's Winter Weather

Hey, when it dropped down to below -20 here in Illinois a couple
winters ago, my 92 Toyota Corolla started right up!  The 91 Pontiac
Grand Am needed some coaxing (attached a trickle charger to the
battery).  The Church bus has a block heater which is really
handy to have.  For you Southerners, a block heater heats and
circulates the oil.  A plug dangles out from the grill, you run an
extension cord out to it.

Now for a really yummy reciple: lamb fajitas!

Ingredients:
  1/2 lb boneless lamb
  10 small flour tortillas
  1 ripe avocado *or* Rich's Quick Guacomole (reciple below)
  shredded cheddar cheese
  lettuce
  chunky Salsa
  Mrs Dash original seasoning, salt & pepper to taste


Wrap three or four fresh tortillas tightly in some aluminum
foil, place in 300 F oven to warm.

Slice the lamb into thin slices, sprinkle liberally with Mrs
Dash seasoning.  If you got a tough cut of lamb, sprinkle
a little meat tenderizer on the meat.  Salt/pepper to taste.
If you don't have Mrs Dash seasoning, use onion, garlic,
pepper, and a little cayenne pepper.

Cut the avocado in half, remove the pit, slice the avocado.
Remove skin.  Avocado is ripe when you can push the stem in.
If the avocado is not ripe, it'll be hard and "green"
tasting.

Grill, broil, or pan-fry the meat till done.  Put into
tortillas, top with a little cheese, a slice or three of
avocado (or guacomole), lettuce, and salsa.  Enjoy!

Rich's Creamy Quick Guac'

Cut ripe large avocado in half, remove seed.  Scoop the avocado
flesh out with a spoon and put into small bowl.  Mash the meat
with a fork or potato masher.   Mix in 1/4 cup of Ranch-style
salad dressing.  Serve as a dip for tortilla chips or as a
topping for tacos or fajitas or burritos.  Yummmm!

in our Sunday school received the Holy Ghost last Friday *PTL!*
two more were praying for Holy Ghost after Church last night --
I don't know yet if they received or not since I had to take some
kids home on the bus.  GOD IS GREAT AND GREATLY TO BE PRAISED \o/
